Slaw and Order

Every once in a while, a recipe sneaks into your life in a way you weren't expecting. On a recent trip to Orlando, I stopped at Fresh Kitchen for the first time. I wasn't expecting much from a fast-casual restaurant. I figured I'd order something healthy, enjoy lunch, and get back on the road. Then I took one bite of their Chard & Cabbage Slaw. That was it. The chicken was good. The rice was fine. But all I could think about was... cabbage.


I spent the entire drive home trying to describe why a bowl of shredded vegetables was so good. Was it the dressing? The crunch? The freshness? Whatever it was, I couldn't stop thinking about it. Stephen, who has learned to entertain my food-related obsessions, patiently listened while I gave what was essentially a TED Talk on cabbage.


Since our evenings usually end with half an episode of a crime show before one of us falls asleep on the couch, it felt fitting to launch an investigation.


After a few rounds of experimenting, adjusting ingredients, and taste-testing, I'm happy to report that the case has officially been solved.

Better yet... Stephen has unofficially become the lead witness. He's been eating this slaw every single day.


And that's about the highest compliment a recipe can receive in our house.

If you know Stephen, you know he doesn't get excited about complicated recipes or trendy health foods. He wants meals that taste great, fuel his training, and are easy to grab between coaching classes. This slaw checks every box. We've been making a large batch at the beginning of the week, and by the time dinner rolls around, there's a very good chance half of it has already disappeared into his meal prep containers. The best part is that it isn't just delicious. It's packed with ingredients that are genuinely good for you.


Cabbage is one of those vegetables that rarely gets the attention it deserves. It's incredibly affordable, lasts forever in the refrigerator, and is loaded with vitamin C, vitamin K, and fiber. The fiber helps keep you full, supports digestion, and feeds the healthy bacteria living in your gut. It's one of those foods that quietly does a lot of work behind the scenes.

Swiss chard deserves a little spotlight, too. Its deep green leaves are full of vitamins A, C, and K, along with magnesium and potassium, nutrients that play important roles in muscle function and recovery. For people who train regularly, those are nutrients worth paying attention to. Add carrots, cilantro, green onions, and a simple homemade dressing, and you've got a side dish that somehow feels both refreshing and satisfying. It works next to grilled chicken, salmon, steak, tacos, burgers, or honestly just eaten straight out of the bowl while you're pretending you're only grabbing "a little taste."


One of my favorite things about cooking is discovering recipes that don't feel like you're trying to eat healthy. This isn't a bowl of vegetables you force yourself to finish because you know you should. It's the thing you finish first.


Ingredients

  • 1 Bag Cabbage Slaw

  • 1 Bunch Swiss Chard, chopped

  • 1 Bunch green onions, sliced

  • 1/2 Bunch fresh cilantro, chopped

Dressing

  • 2 tablespoons apple cider vinegar

  • 2 tablespoons olive oil

  • 1 tablespoon agave

  • 1 teaspoon Dijon mustard

  • ½ teaspoon salt

  • ¼ teaspoon black pepper


Directions

Whisk all of the dressing ingredients together until smooth.


Combine the cabbage, chard, green onions, and cilantro in a large bowl. Pour the dressing over the vegetables and toss until everything is evenly coated.


Then comes the hardest part: leave it alone. Let It sit on the counter, pay It a visit every 15 minutes, and give it a toss. You'll start to see the magic happen. Refrigerate the slaw for 30 to 60 minutes before serving. The cabbage softens just enough, the dressing works its way into every bite, and the flavors come together far better than they do straight out of the mixing bowl.


The Verdict

After a thorough investigation involving multiple grocery trips, repeated testing, and one very willing taste tester, I've reached my conclusion.

Slaw & Order is GUILTY... of becoming a permanent resident in our refrigerator. And if Stephen keeps eating it every day, I have a feeling this case won't be closed anytime soon.
